Ellipsus - an amazing in-browser Docs/Word replacement, also fully anti-AI. I use this for writing and they have drafts, an outline to jump to different chapters or sections, it's incredible.

Firefox - Made the switch away from Chromium a little while back and definitely don't regret it. Although right after I switched they updated their privacy policy to remove the parts about not selling data, and then started going all in on the AI craze as well.. but for now I'm still sticking to it.
